"Everything" Cauliflower Rolls - A Hole Lotta Cheese1

Cauliflower is the queen in low carb recipes. I’ve attempted the cauliflower pizza crust and it wasn’t easy or pretty. These rolls though? Cauliflower worked perfectly to create a low carb, gluten free, everything bagel alternative that I know you’ll love as much as I did!

Whenever I hear that someone doesn’t love everything bagels I’m shocked. Like HOW IS THAT POSSIBLE. But then I remember that I am one of the pickiest people I know. Though I’ve gotten much better recently, and I realize that people are allowed to not like foods. I think I’m just always surprised that I like a food that other people don’t. Plus, Everything Bagels are perfect. Really, really perfect.

But bagels not particularly healthy, at all. And since they’re so delicious I’m all for treating myself every once and a while. You know it’ll be worth it. It’s always a better option though to find a healthier alternative 🙂 I won’t lie to you, these rolls aren’t comparable to a bagel but you can get the flavors thanks to a not so secret ingredient. I found this miracle seasoning at Trader Joe’s for only $1.99! It was perfect for this recipe instead of getting all the individuals seasonings. I’ve also put it on hard boiled eggs and that was such a delicious snack!

Not only are these rolls super easy to make, which coming from the girl who can’t bake anything is really saying something, but they’re gluten free too! I’m trying really hard to eat a more gluten free lifestyle since I realized that gluten seems to be the cause of my headaches. I haven’t eliminated gluten completely but I’d rather have the gluten in pasta and remove it from my other meals. So I can look past the fact that these aren’t really like bagels, because they are delicious and easy to make.

This was the most successful cauliflower recipe I’ve ever made, probably because I didn’t have to do any squeezing when it came to the cauliflower. I felt absolutely no guilt eating my breakfast sammy this morning with this cauliflower roll instead of an English muffin. I may have had to eat the sammy with a fork, but getting those veggies in without even noticing was a great start to the day!

Instructions
  1. Preheat oven to 400 degrees.
  2. Rice cauliflower in the food processor.
  3. If making your own almond flour, grind slivered almonds in food processor until a powder forms.
  4. Combine riced cauliflower, almond flour, eggs, salt and garlic powder in a bowl.
  5. Form dough into even balls and place on a greased baking sheet. Sprinkle Everything Seasoning generously on each roll. Bake for 30 minutes until golden brown.
  6. Serve rolls on their own or make a sandwich.
